30 Minute Beef Goulash
This Americanized version of the famous Hungarian stew is so easy to make! Tender beef and noodles make this 30 Minute Beef Goulash a winner.
Ingredients
- 1 Tbsp vegetable oil
- 1 lb. cut minute steak
- 1 onion, diced
- 3 cloves garlic, minced
- 4 russet potatoes, diced
- 2 cups beef broth
- 1 cup water
- 1 15-oz cans tomato sauce
- 2 tsp paprika
- 1 dried bay leaves
- 1/2 cup plain yogurt
Instructions
- In a large pot or dutch oven heat 1 Tbsp oil over medium heat and add the beef, frying until browned. Remove from pan and set aside.
- Add 1 Tbsp oil to the pan and heat. Add the onion, and garlic and cook until onion is translucent, about 4 minutes. add the potatoes, beef broth, water, tomato sauce, paprika, bay leaves, and salt and pepper to taste. Simmer about 20 minutes uncovered until potatoes are tender. Add the beef to the pan and swirl in the yogurt. Remove from heat and serve.
Notes
Serve with buttered egg noodles.
If you cannot find minute steaks, chop up some beef round into small pieces.
