7-Up Cake

Recently I was looking through my late grandmother's personal cookbook. Pages are torn and folded over, there are oil splatters on the fried chicken recipe, and her handwriting dots every page. Growing up, making a visit to my grandparent's house in Arizona was always a treat. She knew how much I loved to cook and let me help with every meal during my stay. So when she passed, I requested one item: her collection of personal recipes. I flip through the checkboard book every so often to look at the recipes. Today I landed on the 7-Up cake.

What is 7-Up Cake?

First introduced in a promotional recipe booklet published in 1953, the 7up pound cake has been a retro party staple for decades. Made with 7up soda, the cake (usually baked in a bundt pan or tube pan) is light and refreshing. The carbonation in the soda helps the cake rise without the addition of baking soda or baking powder. The lemon-lime cake is usually topped with a drizzle of frosting to add a little bit of extra sweetness.

Preheat your oven to 325 F and grease a bundt pan with cooking spray. Set aside.

In a large bowl, beat together room temperature unsalted butter with granulated white sugar until creamy and smooth. Add large eggs one at a time, beating between each addition. Stir in the all-purpose flour. Add the lemon extract and 1 cup 7-Up. Pour batter into the prepared pan and bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 10 minutes.

Remove from oven and let cool 10 minutes before taking bundt cake out of cake pan and onto a wire rack.

Meanwhile, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth. Drizzle on the warm cake and let drip down the sides. Wait until cool to serve this cake recipe.

It's not a party without this retro 7-Up cake recipe! Made with 7-Up soda, this lemon pound cake is as fluffy as a cloud of air.

Ingredients
  

  • 3 cups granulated sugar
  • 1 1/2 cups unsalted butter, room temperature
  • 5 large eggs
  • 3 cups all-purpose flour
  • 2 Tbsp lemon extract
  • 1 cup 7-Up

For the Glaze

  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
