Weight is one of the most pervasive subjects in the country. Whether you rely on methods like the BodyBoss to maintain a healthy lifestyle or you participate in Meatless Mondays, the only conversation about weight loss that one has should be between themselves and their doctor to determine the best fit for a healthy lifestyle. When Brittany Williams, a mother of three, decided to embark on a weight loss journey, she had no idea what was in store for her.

The mom from San Diego, California told ABC News that after her 2017 New Year's Resolution to cook all of her family's meals at home, she almost considered weight loss surgery. As she said, "I didn't think it was possible to lose all the weight by myself."
After a succession of miscarriages amid successful pregnancies, her peak weight was 261 pounds. She realized her size was holding her back from playing with her young children; she couldn't sit on the floor or run outside with them. That changed when she pulled out the Instant Pot her husband had bought her years before.
Though it went untouched for those years, it changed her life entirely when she became determined to lead a healthy lifestyle. Prior to the resolution, she told ABC News about her typical routine that included no breakfast, chili for lunch, and a frozen meal for dinner.
As she told ABC News,
"Now I start my day off with water and always eat breakfast, usually either a smoothie or a frittata in the Instant Pot. And lunch we usually do raw veggies -- so a salad with olive oil and balsamic vinegar -- and for dinner I'll do something again in the Instant Pot like a vegetable lasagna or a beef stew or a chicken stew."
Her plan was so successful, she lost 77 pounds since the beginning of the year. Weight loss isn't the only thing she gained from sticking to her resolution, she says that her family of five now only spends $250 at the grocery store every other week. The budget control of cooking at home is another plus.
Williams gained so much joy from this experience that she began a blog, Instant Loss, where she documents her journey into a healthy lifestyle through Instant Pot recipes and motivational posts. Her Mama's Simple Instant Pot Chili and Almond Pulp Pancakes are two notable recipes that easy and delicious.
While her resolution comes to an end on January 1, 2018, Williams has gained so much more than a smaller pants size from this journey. She has found a community online of support, something that is important for everyone to find. As for advice she'd give to others in her situation,
"I was so tired of being sick and tired and the challenge is really what pushed me. Go at your own pace. If it's totally overwhelming for you to think about cleaning out your pantry, just go one meal at a time. Just give it a try."
