It's also quick-cooking, so you can whip up this delicious dish in no time.

The first step is to cook the raw cauliflower florets. Kim offers some tips for getting the fluffiest cauliflower mash when you cook it: steam, don't boil, let it sit after steaming to release some of the moisture and then drain well.

Steaming gives you creamy cauliflower when you mash it up, so once your cauliflower is steamed and drained, pop it into your food processor and whirl it into cauliflower purée. If you don't have a food processor, a little bit of elbow grease and a masher should get you the same result.

Add the butter, garlic powder and sour cream and continue to mix until fluffy. Don't forget to season the cauliflower purée with some salt and black pepper. The mixture will look like mashed potatoes.

Place the mashed cauliflower into a microwave or oven safe dish and mix in half the cheese and chives, then sprinkle the rest of both ingredients on the top. And, because this is a loaded cauliflower recipe, add some bacon, too.
