The Drinks
Rosemary Infused Frozen Peach Bellini
After a long Easter egg hunt with the kids, it's nice to sit back and relax during Easter Sunday brunch with a Bellini in hand! These Bellinis might just be the best thing to help you recover! This Bellini recipe tastes like a traditional Bellini, however it's made in the blender rather than just mixing peach purée and Prosecco together.
This recipe has an extra touch of elegance from the rosemary simple syrup. The rosemary compliments the peach flavor beautifully and I'm sure you'll have some extra springs hanging around, especially if you're planning on making prime rib or roasted leg of lamb for Easter dinner.
Non-Alcoholic Sangria
If you're not looking to whip up at batch of cocktails on Easter Sunday, be sure to add this sangria mocktail to your Easter brunch menu. Sangria is one of my favorite drinks to enjoy, mainly for the fresh fruit, and it's truly a crowd pleaser.
This simple recipe has a ton of flavor from the black tea, orange & pomegranate juice, cinnamon sticks and of course, the assortment of fresh fruit. In this sangria recipe, you can use whatever fresh fruit you prefer, but this one suggests using oranges, lemons, limes, and apples.
If you're tight on time, you can always prepare this the night before making sure to stir in the carbonated water just before serving. Perfect for a brunch buffet! Here's the recipe.
The Main Course Brunch Dish
Quiche Lorraine with Hashbrown Crust
Don't get me wrong, I absolutely love enjoying an assortment of breakfast casseroles or eggs Benedict for Easter brunch, but there's something about quiche that just screams brunch buffet! I especially gravitate towards quiche recipes like this one. They're simple to prepare and you don't have to worry about rolling out buttery pastry dough. Instead, this quiche Lorraine recipe has a hashbrown crust.
It's filled with a creamy egg mixture along with diced ham, fresh oregano and cheddar cheese. Make sure to prepare this quiche Lorraine in a springform pan for an easy release. You can also make it ahead of time. Here's the recipe.
Baked Blueberry Lemon French Toast
For an Easter brunch dish on the sweeter side, check out this blueberry lemon French Toast breakfast casserole. It's decadent, fresh and sweetened with a little maple syrup. Make sure to use a sturdy bread like Hawaiian slider rolls or Challah bread so it can hold up to the milk and egg mixture.
Doesn't the cinnamon sugar crumb topping takes this brunch recipe to the next level? Here's the recipe.
The Side Dishes
Loaded Deviled Eggs
Every year my church hosts a potluck Easter brunch and every year there are rows of deviled eggs! It's easy to whip up a bunch of deviled eggs for Easter Sunday, especially if you have a ton of extra hard boiled eggs hanging around after an egg hunt.
These eggs are loaded with a few special ingredients like bacon, cheddar cheese, and fresh chives for a fun twist on traditional deviled eggs. And any dish that includes bacon sure to be a big hit Easter morning! Here's the recipe.
Fresh Fruit Kebabs
Sure it's nice to make a big bowl of fresh fruit salad as a side dish for Easter brunch, but why not include these festive fresh fruit kebabs in your brunch menu? There's so easy to make, even the kids will have a blast helping out.
Use any fresh fruit you like (apples, strawberries, grapes, etc) and for the Easter bunny cut out, make sure to use something like honeydew, pineapple or watermelon. You can find an Easter bunny cookie cutter on Amazon.
Quinoa Salad with Sugar Snap Peas
Quinoa is one of those healthy, gluten-free grains that some people go crazy for! This is a great salad to serve on your Easter brunch menu and can be prepared the night before and served at room temperature.
The sugar snap peas are crunchy and a delicious addition to any springtime dish. This recipe calls for fresh chives, but I'm thinking fresh mint would taste really good, too. Here's the recipe.
The Dessert
Sour Cream Coffee Cake
I'm sure you have plenty of go-to sweet treats for your brunch buffet like banana bread or blueberry muffins, but this gorgeous sour cream coffee cake is definitely one to add to your Easter Sunday menu. I love making this recipe for a big crowd because everyone just can't get enough of it.
The sour cream adds a tangy flavor to this cake and of course it pairs beautifully with a mug of coffee. The cinnamon sugar walnut (almonds or pecans work too) streusel adds warm flavor to this brunch recipe and will fill your house with a mouthwatering aroma!
Make sure to save a few slices for yourself to enjoy after Easter dinner- it's just that good! Here's the recipe.
