These 1 inch balls can be made gluten free and with no carbs if your diet calls for it. They make for great vegetarian meatball replacements, and you can grab some veggie marinara for a low cholesterol dinner item.
What's In Spinach Balls?
One recipe found on YouTube uses cornbread stuffing mix, garlic powder, melted butter, shredded sharp cheddar cheese, and beaten eggs mixed together in a large bowl. Then, you just add frozen chopped spinach that's been thawed out, mix it all up in the mixing bowl, and scoop out balls of the concoction with a tablespoon or cookie scoop. You can swap out the original recipe's cup butter for other oils if you're picky. It all goes on a cookie sheet to be baked, or on a parchment paper-lined baking sheet to freeze and save for baking later.
Other recipes for spinach balls call for things like parmesan cheese, ground Black pepper, Italian seasoning, chopped onion, seasoned bread crumbs, Panko bread crumbs, ground thyme, salt, pine nuts, onion powder, cayenne pepper, garlic salt, and more.
Spinach balls can also include other veggies like artichoke, kale, red bell pepper, or other cheeses like feta cheese or mozzarella to make it more of a cheesy spinach ball. Some recipes also call for using fresh spinach instead. The main sticking point seems to be that the mixture will be easier to manipulate into balls if you let it get to room temperature.
