Bacon Arugula Salad & Strawberry Vinaigrette
This sweet and savory salad marries an interesting flavor and texture combo that somehow works so well it makes you forget you're eating healthy.
Ingredients
Strawberry Vinaigrette
- 1/2 cup olive oil
- 1 cup strawberries, sliced
- 2 tbs balsamic vinegar 2 tbs = original
- Salt and pepper, to taste
Main Salad Fixings
- 5 to 6 oz arugula
- 1 cup strawberries, sliced
- 4 to 5 slices bacon, cooked and crumbled
Optional but tasty additions
- 2 oz crumbled feta
- 1/4 red onion, sliced
- 1/2 cup chopped pecans
Instructions
- To prepare the vinaigrette, combine all the ingredients in a food processor or blender and pulse until smooth.
- Toss together arugula, strawberries, and bacon to evenly distribute, then pour on the vinaigrette. Toss again to evenly coat.
- Serve it up, adding additional toppings as desired.
