My grandmother always had a can of bacon fat on the back of the stove, however, storing it in the fridge or freezer will prolong its life immensely. Bacon grease will last about 3 months in the fridge and indefinitely in the freezer.
My tip: once you've strained your bacon fat, transfer it into ice cube trays to freeze and remove to a freezer bag for storage. When needed, just grab a cube and start cooking!
