Blueberry Lemon Mug Cake
This single-serving blueberry lemon mug cake is the perfect midnight snack with a tall glass of milk. Shh, we won't tell!
Ingredients
- 2 Tbsp butter melted
- 1/4 cup flour
- 2 Tbsp sugar
- 1 egg yolk
- 1 Tbsp milk
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
- 1/2 tsp lemon zest
- 1/4 cup blueberries
- 1 tsp turbinado sugar
Instructions
- In a large mug mix together melted butter, flour, sugar, egg yolk, milk, vanilla, baking powder, lemon zest, and blueberries.
- Top with turbinado sugar. Microwave until the cake pulls away from the sides, about 1 minute 30 seconds. Let cool.
Notes
Make sure to keep an eye on your cake while it bakes. Over-baked mug cakes get a bit rubbery.
We recommend using a 12 or 14 oz mug to fit the cake.
