This buffalo chicken pizza recipe calls for Monterey jack cheese, but mozzarella cheese or cheddar cheese are great replacements if that's what you have on hand. You can either buy pizza crust to use homemade pizza dough, either will yield a tasty result! If you don't have grill seasoning on hand, you can easily make your own by combining a tablespoon each of black pepper, salt, onion powder, garlic powder, coriander, and crushed red pepper. Preheat your oven to 425 degrees Fahrenheit, and preheat the grill pan to high.
Put the chicken on a plate and drizzle extra virgin olive oil over it, then season with grill seasoning. Once the grill is hot, add on chicken and cook for about 3 minutes on each side. You can also use a regular stovetop pan if you don't have a grill plan.
Once the chicken is grilled to perfection, remove it from the grill and shred it or thinly slice it. Set aside.
Using a floured surface, stretch the dough to the size of the pizza, sprinkling with flour or cornmeal to handle it more easily. Allowing it to warm up for a few minutes makes it even easier. Put pizza on a pizza pan, pizza stone, or baking sheet and set aside.
Warm a medium skillet to medium heat, then put in butter, Worcestershire sauce, hot sauce, and tomato sauce. Remove from heat and add chicken to the sauce, coating it completely.
