- 12 tablespoons (1 1/2 sticks) unsalted butter
- 1/3 cup maple syrup, honey or agave syrup
- 2 1/4 cups buttermilk, preferably Bulgarian-style, well-shaken
- 3 large eggs
- 1/3 cup thinly sliced scallions, green parts only (optional)
