Butternut Squash Waffles
Have some leftover steamed butternut squash from the night before? Puree it up and make a batch of Butternut Squash Waffles.
Ingredients
- 1 1/2 cups butternut squash puree
- 2 cups milk
- 1/2 cup butter, melted
- 2 eggs
- 1 tsp vanilla extract
- 1 Tbsp maple syrup
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- powdered sugar
Instructions
- In a bowl mix together the squash, milk, butter, eggs, vanilla, and maple syrup until incorporated.
- In a separate bowl whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger. Add the wet ingredients into the dry and stir until just moistened.
- Preheat your waffle iron according to manufacture's instructions. Cook the waffles until golden on both sides. Top with powdered sugar and serve.
Notes
If you prefer a sweeter waffle, add 2 Tbsp of maple syrup.
You can also use this batter to make delicious pancakes.
