One of my favorite things to visit when in a new city or country is historical churches. I've visited the Old South Meeting House in Boston (which was erected in 1729 and was the place where the Boston Tea Party was organized) and St. Peter's Basilica where I got an anxiety attack from all the people in the crowd. But no church was as beautiful to visit as the Sainte-Chapelle. Built in the Gothic style, the construction of the church began in 1238. Restored after the French Revolution, the cathedral has one of the most extensive stained-glass window collections in the entire world. While it may be difficult to take a trip to Paris to see it yourself, recreating the cathedral-windows at home is simple and above all tasty when you follow this cathedral window cookies recipe.

More like candy than cookies, these traditional Christmas cookies get their characteristic name from the colored mini marshmallows that are embedded in each bite.

It's no surprise these chocolate marshmallow cookies were named after the beautiful stained glass found in many churches around the world. And with only four ingredients, these cathedral cookies are some of the easiest Christmas recipes to whip up when unexpected company arrives.
To begin, melt the semisweet chocolate chips and butter over low heat in a heavy saucepan until the chocolate mixture is melted. In a large bowl combine the colored marshmallows and chopped pecans. Pour the chocolate onto the marshmallow mixture and mix well. Cover with plastic wrap and refrigerate until firm, about 4 hours.
Once the miniature marshmallows and chocolate are firm, shape the mixture into a 12-inch roll and wrap in wax paper. Pop back in the fridge and chill until firm, another 4 hours.
Unwrap the log and cut the log into 1/2-inch slices, revealing the church window cookies. Serve during Christmas time.
