Fried cabbage and potatoes may be an Irish-inspired dish, but you don't have to wait until St. Patrick's Day to make this simple and filling comfort food. Crunchy, warm, and delightful, you can serve fried cabbage and potatoes as a side dish for a weeknight meal or put an egg on it and call the main dish anything from brunch to breakfast for dinner.

Is Cabbage Healthy?

Cabbage in particular is a great source of vitamin K, vitamin C, folate, manganese, vitamin B6, calcium, potassium, and magnesium, according to Healthline. "Cabbage also contains small amounts of other micronutrients, including vitamin A, iron, and riboflavin," the site reports. That's right — you can get all of those benefits from throwing together this great stir-fry meal!

How Do You Chop Cabbage?

Before you can saute your cabbage, you've got to cut it all up! While you can purchase bagged shredded cabbage at the grocery store, shredding or chopping your own cabbage ensures its freshness and it's more cost-effective!

There are three different ways to shred cabbage:

Using a Knife

This method does not require any special tools other than a sharp knife! Start with a whole cabbage and cut into quarters, going through the core. Remove the core from each piece and then cut long thin slices to shred the cabbage.

Using a Food Processor

Like the knife method, you'll need to quarter and core your cabbage first. Add your shred attachment, then slowly feed the wedges of cabbage into the machine. You might need to chop the wedges down a bit if they are too big.

Using a Box Grater

If you want light and airy shredded cabbage, use a box grater! While this method might be the most labor-intensive, it's 100% worth the effort.

How To Make Fried Cabbage and Potatoes

While you cook bacon in a large skillet over medium heat or medium-high heat (six slices is a good start), shred a small head of cabbage (we like green cabbage here but red cabbage may work) and peel and chop three russet potatoes. When the bacon is crispy, take it out of the pan and leave the bacon drippings. Add the potatoes, cabbage, garlic powder, onion powder, a teaspoon salt or more to taste, and ground black pepper to the pan. Cover the skillet and cook the veggies until the potatoes are tender, stirring occasionally, which should take you about 10 minutes of cook time.

Crumble the bacon over the fried cabbage and potatoes, then serve and enjoy! This is one of the simpler potatoes and cabbage recipes, but we think it's one of the most delicious. You could also add ingredients like kielbasa, coleslaw, yellow onion, corned beef, or serve the whole thing over mashed potatoes — the possibilities are endless!
