Boozy Triple-Citrus Mojito Popsicles
These Boozy Triple-Citrus Mojito Popsicles taste even better on the beach, but the bright flavors and rum will instantly bring the sea breeze to you.
Ingredients
Lime Simple Syrup
- 2 cups white sugar
- 1 cup water
- 2 cups mint leaves, packed
- Juice of 2 limes
Boozy Triple-Citrus Mojito Popsicles
- 2 1/2 cups club soda
- Juice of 2 lemons
- 1/4 cup white rum
- Zest of 2 limes (juiced above)
- 1 orange, sliced and zested
- Mint leaves, optional
Instructions
Lime Simple Syrup
- In a small saucepan, add sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
- When the sugar dissolves, stir in the mint leaves and lime juice. Simmer for about 5 minutes. Let cool.
- Grab a large mixing bowl, preferably one with a pour spout or lip. Strain syrup through a fine mesh strainer to remove the mint leaves. If you're not that concerned with greenery, you can fish them out with a wooden spoon.
Boozy Triple-Citrus Mojito Popsicles
- Add the club soda, lemon juice, rum, lime zest, and orange zest to the syrup mixture. Stir to combine.
- Chill the liquid for at least 10 minutes in the refrigerator.
- Pour into popsicle molds. Add an orange slice or two to each popsicle, and a few mint leaves if you prefer.
- Freeze for at least 4 hours or overnight. Enjoy poolside, or standing above your kitchen sink because they're that good. No judgment, y'all.
Notes
You can remove the orange skins before adding to the popsicles or you can plop them right in as nature intended.
We swear by this popsicle mold, which makes 10 popsicles at a time, and comes with 24 wooden sticks.
If you have trouble removing your popsicles from the mold, run the sides of the mold under warm water for a few seconds at a time.
You probably need a fruit snack, too, right?
