Grilled Farmer's Market Pizza with Eggplant and Peppers
Enjoy your farmer's market bounty with this vegetarian pizza. This Grilled Pizza with Eggplant and Peppers is the perfect summer lunch.
Ingredients
- 1 eggplant, cut into thin rounds
- 1 zucchini, sliced thinly
- 1 pepper, cut into thin strips
- 2 Tbsp olive oil
- 1 lb refrigerated pizza dough
- 3/4 cup tomato sauce
- 1 cup shredded mozzarella
- 2 tsp Italian herbs
Instructions
- Preheat your grill to high.
- In a medium mixing bowl combine eggplant, zucchini, pepper, and olive oil. Season with salt and pepper. Arrange on oiled grill rack and grill until charred and tender, about 7-9 minutes. Remove from grill.
- Meanwhile roll your dough into a 12-inch oval on a lightly floured surface. Place on grill and cook until each side is browned, about 3 minutes per side.
- Spread tomato sauce on pizza and top with cheese and vegetables. Sprinkle with Italian seasoning. Grill until cheese melts, about 5 minutes. Cut into slices and serve.
