A warm, homemade biscuit is one of those simple pleasures in life that are not to be taken for granted. Coming out of the oven piping hot, sinking your teeth into the flaky texture and buttery flavor of a biscuit is truly like a little piece of heaven. And when it comes to making the perfect biscuit, nobody does it like the South. Getting southern biscuits just right, however, isn't always easy. The trick here to biscuit making is to begin with frozen, unsalted butter. Rather than cut butter, the cold butter is grated using a box grater, contributing to the overall texture and flavor. Then in a large bowl, all the dry ingredients - all purpose flour, sugar, baking powder and baking soda - are added and sifted into another bowl.
Next, a touch of kosher salt and the chilled grated butter is tossed in with the flour mixture. That's all mixed up with a fork before it gets a dose of heavy cream and tangy buttermilk. Once that's all combined, it's time to shape those buttermilk biscuits!
To prevent sticking to your working surface, sprinkle out some flour. Pat down the dough on the lightly floured surface to the achieve the desired width, then use a circular cookie cutter to get the perfect shape. Place biscuits evenly spaced on a parchment paper lined baking sheet, then sprinkle with sea salt.
Before getting all excited to pop them into the oven, they need to set in the fridge for 20 minutes to ensure proper baking. Then after about twelve minutes cook time, these heavenly biscuits will turn golden brown and ready to be savored any way you like. Homemade funky jam flavors, rosé jelly, or sausage gravy all taste great on these biscuits. If you're a purist at heart, you simply can't go wrong with a dab of melted butter. Mmmm, biscuit time.
