If I had to choose one dessert to eat for the rest of my life it would be ice cream. Cool, creamy, and satisfying, ice cream is delicious year-round. But sometimes its not completely convenient to pull out a tub of ice cream and scoop it into a bowl. That's where ice cream bites come in. Like truffles, these sweet treats are essentially ice cream balls covered with a melted chocolate coating. Some bites even include no-bake cookie dough which pairs perfectly with a variety of ice cream flavors.

Creamy and Crunchy Oreo Ice Cream Bites
All you need to make this ice cream recipe are Oreos, ice cream, dark chocolate, coconut oil, and toppings such as chopped pecans or sprinkles.
Using a small ice cream scoop, scoop the ice cream and place it on an oreo cookie. Place on a baking tray or cookie sheet and repeat with about 5 scoops. Place the ice cream scoops and Oreos in the freezer and freeze until firm.
Meanwhile, heat the chocolate and coconut oil in a small bowl in the microwave until melted, stirring occasionally. The total time should be about 1-2 minutes.
Remove the ice cream from the freezer and dip into the chocolate, covering the ice cream and oreo cookie. Place the treat on a sheet pan topped with a sheet of parchment paper. Refreeze until firm. Transfer to an airtight container and eat within a month.
