Lamb Burgers with Fresh Herb Tzatziki
Despite the pronunciation, these burgers are surprisingly easy to make. Mint, dill, and parsley all complement the lamb's flavor without covering it up.
Ingredients
Lamb Burgers
- 1 lb ground lamb
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 4 buns
Fresh Herb Tzatziki
- 1 peeled cucumber, seeds removed (Pro Tip: Buy an English cucumber and skip de-seeding it)
- 1 tbs fresh mint, diced
- 1 tbs fresh dill, diced
- 1 tbs fresh parsley, diced
- 1 clove garlic, minced
- 1 cup Greek yogurt
- 1/2 lemon
Instructions
Fresh Herb Tzatziki
- Grate the cucumber, then wring out as much moisture as you can from it.
- Toss the cucumber in a mixing bowl with the yogurt, garlic, and herbs. Zest the lemon half, and juice the lemon into the bowl.
- Stir it up, then taste to see if you want to add salt and pepper. The sauce can be made a day ahead of time.
Lamb Burgers
- Form the meat into 4 patties bout half an inch wider than your buns, and be sure to make a little dimple in the middle so that you don't end up with a UFO-shaped burger.
- Season the top of each burger with salt, pepper, and paprika.
- Cook patties on a stovetop or hot grill, about 4 to 5 minutes per side.
- Serve on a toasted bun with the tzatziki sauce and your favorite toppings!
