Steps:
First, you need to preheat your oven to 350 degrees. That'll give you plenty of time to prep. Start with taking your hash brown potatoes and 1 tablespoon of the taco seasoning, and mixing in a large bowl. Next, you'll want to layer that at the bottom of a baking dish or baking pan. Don't forget to spray it with nonstick cooking spray! You can substitute these hash browns with cabbage or other veggies if you're looking to cut your carbohydrates.
Now you need to cook the meat. Spray a large skillet and cook the breakfast sausage with your diced onions on medium-high heat for up to 7 minutes, or until thoroughly cooked. You can substitute with chorizo if you want to add a bit of flair to your tex-mex. If you love veggies, this is a good opportunity to make it your own as well. Add in and sauté red bell peppers, jalapeño, black beans, or whatever you'd like. When it's about done, drain any excess liquid.
The last step of your prep is whisking the egg mixture together. Beat large eggs with shredded cheese, milk, salt, black pepper and any taco seasoning mix you have leftover. Feel free to spice things up with chili powder, cumin, or Italian seasoning. Once mixed, throw in the sausage and salsa. Pour egg mixture over the hash browns and you should be ready to stick it in the oven.
Bake uncovered for 40 mins or until the eggs are cooked in the center. Once done, feel free to add whatever toppings you like. Mexican food dishes like this would pair well with sour cream, green onions, cilantro, or even hot sauce. You can even throw on some extra cheese for your Mexican breakfast casserole, like pepper jack cheese which will give it a nice kick. The way this is stacked together reminds us a bit of a breakfast lasagna, and the leftovers reheat wonderfully. If you're looking for new recipes and are tired of your traditional breakfast dishes like French toast, this is the one to try.
