Peach pie is a classic summertime favorite, all sweetness, and warm spice. There's a way you can have the taste of this peach dessert all year round, and even better, it's a treat that works for any happy hour. Serve this yummy peach cobbler moonshine in February and pretend that it's summer.

This DIY peach cobbler moonshine recipe starts off with peach simple syrup made of fresh peaches. Combine sliced peaches, vanilla pods, brown sugar, white sugar, peach tea, and water in a large pot over medium heat. Stir everything until the sugar is dissolved and bring the mixture to a boil, then reduce the heat and simmer for a cook time of five minutes. Take the vanilla pods out and let the syrup cool to room temperature.

In a large bowl, mash or muddle the rest of the peaches, then add the peach simple syrup and the moonshine (you can use, Everclear, too) and mix well. Pour the peach cobbler moonshine into mason jars. Store the jars in a cool dark place. This peach moonshine recipe keeps for up to a year, and it gets better the longer it sits, so don't drink it right away. To make a peach cobbler cocktail, pour the peach cobbler moonshine into a glass over crushed ice, add club soda, and garnish with fresh peach slices and maybe a cinnamon stick. Ingredients
  

Peach Simple Syrup

  • 3 peaches, peeled, pitted, and chopped
  • 2 vanilla pods, sliced down the center
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup peach tea, brewed (No need to wait for this to cool down, can add while warm)
  • 1/2 cup water

Peach Cobbler Moonshine

  • 4 peaches, peeled, pitted, and chopped
  • 750 ML Everclear or plain moonshine

Peach Cobbler Cocktail

  • 4 oz Peach Cobbler Moonshine
  • 4 oz club soda
  • Crushed ice
  • Peach slices, for garnish
  • Basil, for garnish

Instructions
 

Peach Simple Syrup

  • Combine peaches, vanilla pods, brown sugar, sugar, peach tea, and water in a saucepan over medium heat.
  • Stir until the sugar is dissolved. Bring to a boil. Reduce heat and simmer for 5 minutes.
  • Remove vanilla pods. Set aside. Cool syrup.

Peach Cobbler Moonshine

  • Add peaches to a large bowl. Mash with a potato masher, fork, or the back of a wooden spoon. If you have muddling tools, you can use those.
  • Add moonshine and Peach Simple Syrup to bowl. Stir to combine.
  • Store in 8-ounce mason jars. Split pods into equal segments so each jar has a bit of the pod in it.
  • Store in a cool, dark place. Your pantry is the best bet if it does not get direct sunlight.

Peach Cobbler Cocktail

  • Combine Peach Cobbler Moonshine and club soda together in a glass. Stir to combine.
  • Add crushed ice. Garnish with peach slices and fresh basil if desired.

Notes

Refrigerate or place in a cool, dark place, where this moonshine infusion will store for up to a year. The longer it sits, the better the flavors.
