Flaky, simple, wonderful, buttery.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp fine salt
- 1/2 tsp baking soda
- 8 tbs butter, cold Sliced into 1/2-inch pieces
- 1 cup buttermilk, cold
Instructions
- Arrange rack in the middle of the oven. Preheat oven to 425 F. Prepare baking sheet by lining with parchment paper, set aside.
- Add flour, baking powder, salt, and baking soda to a large mixing bowl, whisk to combine.
- Add butter pieces and lightly toss, enough to coat the butter.
- Place bowl in freezer for 10 minutes.
- With a fork in each hand, cut the butter into the dry ingredients until the mix resembles coarse crumbs. If the butter starts to melt while you're working, place in freezer for another 10 minutes then continue.
- Add the buttermilk and stir until just combined.
- Dust your work surface generously with flour. Turn dough out onto surface, and dust the top of the dough with more flour.
- With floured hands or ice cream scoop, gather roughly 3 tbs worth of dough into a ball and place onto prepared baking sheet about 1 inch apart.
- Bake until biscuits are golden brown on top, about 15 minutes.
- Transfer to a wire rack to cool before serving.

Try adding your favorite sweet and savory fillings to the dough - half a cup of cheddar with 2 tablespoons of diced jalapeños is one of my favorites.
