Cajun Shrimp Po'Boy Sandwiches
These Cajun Shrimp Po'Boy Sandwiches are perfect for seafood lovers. Crispy fried shrimp topped with a spicy cajun sauce and lettuce.
Ingredients
For the Cajun Sauce
- 1 cup mayonaise
- 2/3 cup ketchup
- 1 Tbsp cajun spice mix
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 lemon, juiced
For The Shrimp
- 1 1/2 cups milk
- 1/2 cup hot pepper sauce
- 1 egg
- 1 1/2 lbs medium shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 tsp baking powder
- salt and pepper to taste
- canola oil
- 4 french bread rolls
- lettuce and tomatoes for topping
Instructions
For the Cajun Sauce
- In a small bowl combine mayonaise, ketchup, creole spice mix, garlic powder, paprika, and lemon juice. Set aside.
For The Shrimp
- In a large bowl combine milk, hot sauce, and egg, whisking to blend. Add the shrimp and let sit for 4 minutes. Meanwhile heat 3 inches of oil to 375ºF in a deep saucepan.
- In a small bowl combine flour, cornmeal, baking powder, salt and pepper. Add shrimp and toss to coat.
- Add a few shrimps to the oil and fry until golden brown, about 3 minutes. Use a slotted spoon and remove shrimp from oil and transfer to a plate lined with paper towels. Repeat with remaining shrimp.
To Serve
- Place a slathering of the cajun sauce on the french roll. Top with fried shrimp, lettuce, and tomato.
Notes
When frying the shrimp be sure to not over-crowd the pan otherwise your shrimp will take longer to cook and will absorb more oil
If you cannot find french bread rolls, buy a french baguette and cut it into 4 equal portions.
