Cinnamon Pumpkin Pancakes
These Cinnamon Pumpkin Pancakes are perfect for those cool winter mornings. Top these delicious pancakes with maple syrup and butter.
Ingredients
- 1 1/2 cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 Tbsp butter, melted
- 2 cups all-purpose flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
Instructions
- In a bowl combine the milk, canned pumpkin, egg, and melted butter. In a separate bowl whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt.
- Stir the wet ingredients into the dry and stir until just combined.
- Preheat your griddle over medium-high heat and spray with cooking spray. Scoop the pancake mix onto the griddle and cook until browned on both sides. Serve.
Notes
Use about 1/4 cup of batter for each pancake.
