Coconut Date Roll
These coconut date rolls are the perfect afternoon pick-me-up that seem like candy but are packed with fiber but low in calories.
Ingredients
- 1 lb pitted dates
- 1 1/3 cup shredded coconut, divided (Sweetened or unsweetened, your preference)
Instructions
- Process dates and about 3/4 cup of the coconut in a food processor to form a paste. If it's too dry, add up to 3 tbs water, a little bit at a time.
- Pinch off roughly a rounded tablespoon's worth of the date mixture and roll in the leftover coconut to coat.
- These can be enjoyed immediately or refrigerated for up to two weeks.
Notes
These are delicious with almonds. Hide one in the center or a roll, or grind some up with the dates and coconut for an extra layer of flavor and a boost of protein.
