You're going to need sugar, egg yolks and egg whites, butter, salt, and, of course, dark chocolate to make this mousse. You can also opt to add things like chocolate shavings, pieces of chocolate bars, chocolate chips, and even regular whip cream on top of your finished product, but that's up to you.
First thing's first: beat 3/4 cup sugar and 4 egg yolks together in a large bowl. Then, melt your chocolate in a heatproof bowl; a glass or ceramic bowl should work. Melt it in 15-second intervals and stir each time you check it. Do that for up to 3 minutes, then add the butter slowly and beat the ingredients together until smooth.
You'll add the chocolate mixture into the egg yolk mix, then beat four egg whites and just a bit of salt together in a small bowl until stiff peaks form. Add just a pinch of tablespoon sugar over the whole thing, then beat for two minutes by hand or with a hand mixer or electric mixer. Then, gradually stir the egg whites into the bowl with the chocolate.
The mix itself is now basically done, but it needs to be refrigerated for at least 6 hours, if not more. If you can leave it for the night covered in plastic wrap, that's best. You don't want to serve room temperature mousse that's just been whipped together if you can help it.
The chocolatey mousse is a great alternative to the usual dessert suspects like ganache, brownies, chocolate mousse cake, ice cream, and more. Try to use quality chocolate if possible, and consider adding a garnish to make it even more attractive.
You can add things like espresso powder, milk chocolate or white chocolate melted chocolate as a drizzle, homemade whipped cream with DIY whipping cream, cocoa powder, and any number of other ingredients if you want to make it more challenging. But if this is your first time making dark chocolate mousse to dollop in a fancy bowl, keep it simple.
