One of the great things about these English muffin breakfast sandwiches, besides the short prep time, is that it makes four egg sandwiches, which is good for breakfast for the whole family or some advance meal prep if you like freezer breakfast sandwiches. Start by cooking the eggs. Crack four large eggs into four greased ramekins (one egg per ramekin), season with black pepper and salt, and place them on a baking sheet. The whole baking sheet goes into the oven for a cook time of about 13 minutes. Your total time may be a little shorter or a little longer based on how firm you like your egg yolks. The egg whites should be firm though. While the eggs are baking, slice the English muffins (whole wheat English muffins if you are feeling healthy) in half and toast them in a toaster until crispy.
Take eggs out of the oven and let them cool enough to handle them easily. Use that minute or so to set up your breakfast sandwich assembly line with the toasted English muffins, four slices cheddar cheese and four slices of Canadian ham or Canadian bacon. The egg goes on the bottom half, followed by the ham and then the slice of cheese. Place the top muffin half on the cheese, and enjoy your breakfast sandwich!

English Muffin Breakfast Sandwiches
Ingredients
- 4 English muffins, sliced in half and toasted
- 4 eggs
- 4 slices cheddar cheese
- 4 slices Canadian ham
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350ºF. Grease 4 ramekins and place on a baking sheet. Crack an egg into each ramekin and season with salt and pepper. Place the eggs in the oven and bake until whites are firm, about 13 minutes. Remove from oven and let cool slightly before removing from the ramekins.
- To assemble sandwiches place egg, ham, and cheese on a half of an English muffin. Top with the other half. Serve.
