And while the origin of this creamy peanut butter and powdered sugar potato candy recipe is unknown, most people know this recipe as one that was passed down from generation to generation and served during the holidays and Christmas time.

Most likely this recipe was developed during the Great Depression when food was scarce and mothers had to stretch the family grocery dollar. This no-bake treat was the perfect way to add a little something to the table for those with a sweet tooth without breaking the bank.
This candy is no to be confused with Irish potato candy, which contains cream cheese, coconut, powdered sugar, cinnamon and vanilla extract. Irish potato candy, which was invented in Philadelphia, is a popular treat to enjoy around St. Patrick's Day.
How To Make Old-Fashioned Potato Candy

Start off by boiling a small potato until tender. Mash the russet potato in a large bowl until nice and smooth. Add the teaspoon vanilla extract and salt and slowly work in the confectioners' sugar using an electric mixer until a lump-free dough forms. It should almost feel like Play-doh.
Move the mixture to a flat surface which has been sprinkled with powdered sugar. Using a rolling pin, roll dough into a 1/4 inch thick rectangle. Spread peanut butter on the potato mixture and roll into a jelly roll shape starting from the long side (like you would cinnamon roll dough). Wrap in parchment paper or wax paper and chill for a total time of one hour.
Remove the log from the fridge and slice into 1/2-inch thick slices of pinwheels. Store the potato candy in an airtight container for up to a week.
