Pear and Blue Cheese Salad
This Pear and Blue Cheese Salad brings together crispness of pears, a punch of blue cheese, and a nuttiness from walnuts.
Ingredients
For The Salad
- 4 cups mixed greens
- 1 pear, cubed
- 1/4 cup candied walnuts
- 1/4 cup crumbled blue cheese
For The Dressing
- 2 Tbsp apple cider vinegar
- 1/4 cup mayonaise
- 2 Tbsp vegetable oil
- 1 Tbsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
For The Salad
- In a large bowl combine the mixed greens, pear, walnuts, and crumbled blue cheese.
For The Dressing
- In a blender combine the apple cider vinegar, mayonaise, vegetable oil, sugar, salt, and pepper and blend until smooth. Pour over salad and toss.
Notes
If you are packing this for lunch, mix in the dressing right before eating to ensure your salad doesn't turn soggy.
If you do not want to use candied walnuts you can use toasted instead. You can do this on your own by toasting the walnuts in a skillet until light brown.
