Pork Chops with South Carolina Style Mustard BBQ Sauce
This mustard-based BBQ sauce balances a vinegary tang with honey and brown sugar, adds heat with hot sauce, and is so delectable, it makes pork chops sing.
Ingredients
Pork Chops and Rub
- 4 pork chops, an inch or inch and a half thick (Find rib chops if you can get them. They are excellent on the grill)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
South Carolina Mustard BBQ Sauce
- 1 cup yellow mustard
- 1/4 cup brown sugar
- 1/4 cup honey
- 1/2 cup apple cider vinegar
- 1 tbs ketchup
- 1 tbs Worcestershire sauce
- 2 tsp garlic powder
- 1 tsp hot sauce
- Salt and pepper, to taste
Instructions
South Carolina Mustard BBQ Sauce
- If desired, make the BBQ sauce a day or two ahead of time. That'll give the flavors more of a chance to meld.
- Whisk together all BBQ sauce ingredients. Cover and refrigerate until ready to use.
Pork Chops and Rub
- Mix together the dry spices, then sprinkle over the pork chops.
- Heat a grill to medium-high (or put them over the hotter side of the grill), then add the chops. Cover and cook for 2 minutes. Flip and cook another minute.
- Reduce the heat to medium-low, or transfer them to the cooler side of the grill. Mop on some of the barbecue sauce, flipping and mopping more as desired. Grill a few more minutes until they reach an internal temperature of 145 F.
- Remove chops from the heat and let rest a few minutes before slicing. Serve warm with a side of extra sauce.
