Silver Dollar Pancakes
These bite-sized Silver Dollar Pancakes make a fun and healthy breakfast for people of all ages. Dip them in syrup and enjoy.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 1/2 cups milk
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1/4 cup vegetable oil
Instructions
- Preheat your skillet or griddle to medium-low heat.
- In a medium bowl mix together the flour, sugar, baking powder, and salt. Add in the milk, eggs, vanilla, and oil and mix until just combined.
- Spray your skillet or griddle with cooking spray. Pour 1 Tablespoon of batter onto the skillet and repeat until skillet is filled with pancakes. When you see small bubbles on teh top of the pancake, flip and cook another minute more. Remove from pan and place on a plate. Repeat with remaining pancakes.
Notes
Serve with syrup, butter, blueberries, and strawberries.
These pancakes make a great lunchbox snack.
