Ingredients
- 4 sweet potatoes
- 1/4 cup butter, softened
- 1/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground ginger
- 1/8 tsp ground allspice
- 1/2 tsp salt
- 3/4 cup evaporated milk
- 1 vodka pie crust (recipe below)
Instructions
- Preheat your oven to 350ºF.
- Place the sweet potatoes on a baking sheet and cook until tender, about 1 hour. Let cool and scrape pulp from the skin. Place the sweet potato in a bowl and mash until smooth.
- In a separate bowl cream your butter, sugar, and brown sugar until light and creamy. Add in the eggs, vanilla, cinnamon, nutmeg, ginger, allspice, and salt. Stir in the evaporated milk. Add the butter mixture into the sweet potato and whisk until smooth. Pour into your unbaked pie shell. Bake on the bottom rack until the center of the pie is firm, about 1 hour. Remove from oven and serve.
