Corn is a summer season staple that's perfect for a backyard BBQ. Corn is one of the most versatile veggies that can be eaten alone as a side dish or added to soups and salads. There are many ways to cook corn and many different types of corn to choose from. Fresh ears of corn are great cooked right on the grill. If you don't feel like buying and shucking fresh corn, frozen corn is a great alternative.

One of the best and easiest ways to cook corn is to roast it in a cast-iron skillet. The searing hot pan gives the corn a nice charred and caramelized flavor. Roasting helps brings out the natural sweetness of the corn. Frozen corn kernels can be purchased at the grocery store for a very low price. The nice part about buying kernels instead of corn on the cob is that there's no additional prep work needed. You just have to pour the corn into your pan, heat it, and it's ready to serve.

Corn often gets a bad rap for not being the healthiest vegetable out there. Plain corn's nutritional information is better than many probably think. How to Make Roasted Corn in a Cast Iron Skillet

There are plenty of new recipes for corn, but we're sticking with a classic. Roasted corn in a cast-iron skillet is simple and delicious. Making roasted corn in the cast iron requires virtually no prep time. The total time to get this on the table is under 20 minutes. We suggest buying frozen sweet corn to achieve the best combination of sweet and smoky flavor.

In a cast-iron skillet over medium-high heat, add butter and olive oil. Once the butter is melted, add in the frozen corn. You'll want to cook the corn for about 10 minutes, stirring every few minutes to ensure nothing burns. You'll know it's done when the kernels are soft and golden brown.

Turn off the heat and sprinkle with kosher salt, black pepper, garlic powder, and paprika, for a little heat. Serve hot or at room temperature.

  • 1 pound frozen sweet corn kernels
  • 1 tablespoon butter

  • black pepper to taste

Instructions
 

  • Add butter and olive oil to a cast-iron skillet on high heat.
  • Once the butter has melted, stir in the frozen corn and garlic powder.
  • Saute, stirring occasionally until the kernels are browned, about 8 minutes.
  • Off the heat, add salt and pepper to taste.
