Scotcharoos

Scotcharoos, also called scotcheroos, are the chocolatey, more flavorful version of Rice Krispie treats, featuring peanut butter, butterscotch, chocolate and corn syrup. The peanut butter and corn syrup serve to glue together the rice cereal, while the chocolate chips and butterscotch chips are a yummy coating on top. This results in a medley of sweet, delicious flavors all packed into one chewy square treat.

Not only are these brownie-cereal bars tasty, they're quick and easy to make! Scotcharoos are a no-bake dessert, so all you have to do after combining the ingredients is let them set. You can choose which kind of chocolate to use in this scotcharoo recipe- I always go for semi-sweet chocolate, but milk chocolate chips would be tasty as well. You can even play around with the cereal you use, trying out corn flakes or chex to switch it up. This easy dessert transports well, making it ideal for potlucks and picnics!

How to Make Scotcharoos

Prepare a 9x13 baking pan by greasing it, then set aside.

Pour Rice Krispies or other rice cereal into a large bowl, then set aside.

Using a medium pot, bring peanut butter, sugar and corn syrup to a boil, stirring continuously.

Take off heat and pour peanut butter mixture over Rice Krispies, mixing until fully combined.

Pour mixture into prepared pan and press down evenly with a spatula.

Melt chocolate chips and butterscotch chips together in a small pot on medium-low heat, stirring continuously to avoid burning. Alternatively, you can melt them in the microwave using a microwave-safe bowl and heating in 30-second intervals.

Pour over Rice Krispies and allow them to set in the baking dish before cutting and serving. Enjoy these peanut buttery delights!
