Scottish Shortbread Cookies
Cross the pond to the British Isles and enjoy a taste of these Scottish Shortbread Cookies with a spot of tea.
Ingredients
- 1 cup butter, softened
- 2 cups all-purpose flour
- 3/4 cup powdered sugar
- 1/2 tsp salt
- 1 Tbsp sugar
Instructions
- Preheat your oven to 350ºF and grease a 8-inch round cake pan.
- Place the butter, powdered sugar, salt, and all-purpose flour in a food processor and pulse the mixture until a smooth and sticky dough forms.
- Press the dough into the pan and score into 16 wedges. Sprinkle with the sugar and bake until firm and golden brown, about 35-40 minutes. Remove the pan from the oven and let sit 5 minutes. Turn out onto a piece of parchment and cut into wedges. Cool completely before serving.
Notes
If you do not have a food processor, mix the ingredients by hand until a smooth dough forms.
Make sure the butter is softened before making the dough.
