Strawberry Margarita Popsicles
If you don't permanently have a batch of Strawberry Margarita Popsicles in your freezer, it's really time to change that. Right now.
Ingredients
Strawberry Simple Syrup
- 16 ounces strawberries, hulled
- 1 cup water
- 1/4 cup sugar
Strawberry Margarita Popsicles
- 1/2 cup limeade (Can substitute fresh lime juice)
- 1/2 cup tequila
- 1/2 cup seltzer (For best results, use a citrus flavor)
- 2 tbsp orange liquer
- Flaky sea salt
Instructions
Strawberry Simple Syrup
- In a blender or food processor, puree strawberries until liquified. If you don't want to mess with appliances, grab a potato masher and get to smashing in a large bowl.
- In a medium saucepan, combine strawberry puree, water, and sugar together. Bring to a boil. Reduce heat and simmer for 5 minutes.
Strawberry Margarita Popsicles
- Once syrup is cool, combine in a large pitcher with limeade, tequila, seltzer, and the orange liqueur.
- Pour into popsicle molds. Sprinkle each filled mold with flaky sea salt.
- Freeze for 6 hours, or overnight for best results.
- To enjoy, eat solo or add to a glass and top with seltzer!
Notes
If you're a purist, use fresh lime juice in place of limeade for a more tart taste. If you'd rather forget about the tequila element, the flavors and sweetness of limeade pair perfectly to mask the booze.
If you prefer a chunkier popsicle, this is for you! If you'd like a smoother bite, strain your strawberries through a fine mesh sieve before creating the simple syrup.
