Pickles are one of my favorite foods. They're bite-sized. They can be a garnish. So versatile! But they don't always have to be a quick snack or act as a topping on a sandwich. Incorporating pickles into a pie is a fun trick we do down in the South that makes for one delicious treat.

1. This Recipe for Tiny Pickle Pies
This creative recipe makes 10-12 miniature pies with leftover mashed potatoes. Use the below ingredients and these are perfect appetizers to offer friends at a dinner party or for a quick mid-week dinner if you find yourself craving some pickles.
Ingredients:
Pastry for the pie shell
Mashed Potatoes:
- 1 lb. (454 g) potatoes, peeled and quartered (or 2 cups leftover mashed potatoes)
- ½ cup (125 ml) heavy cream
- ¼ cup (56g) salted butter
- ½ teaspoon Kosher salt
- 1/8 teaspoon ground black pepper
- ½ teaspoon (2.5 ml) onion salt, optional
Pie Filling:
- 1 Tablespoon (15 g) butter
- ½ medium onion, cut into small ¼" dice (about 1/3 cup diced)
- 1 small clove garlic, minced
- 75 g (2.5 oz.) Old Cheddar cheese, shredded (about 1 cup shredded)
- ¼ cup dill pickle (45 g), finely diced (1 - 2 small pickles)
- 1 Tablespoon (15 ml) Worcestershire sauce, optional

2. This Pickle Pie for the Cheeseburger Lovers
This cheeseburger pie with pickles would be a great cold-weather recipe but we love it any time of year. Use the below ingredients to make yourself a cheesy pie with all your favorite burger fixings. How delicious does all that golden brown goodness look? And it only takes 50 mins to make including prep time.
- 1 pound ground beef browned
- 1 onion diced
- 3 cloves garlic minced
- ½ tsp salt
- ½ cup dill pickle juice
- ½ cup dill pickles chopped
- 2 tsp Liquid Smoke
- ?..." cup All-purpose Flour
- ?..." cup Milk
- 2 cups Cheddar Cheese Grated

3. This Classic Pickle Pie
Not all pickle pies have to be savory. This recipe from cooks.com includes sweet cream, nutmeg, and cinnamon to balance out the tangy pickle flavors. It sounds weird mixing pickle flavors with a custard, but it totally works.
Ingredients:
- 4 eggs
- 1 1/2 tbsp. cornstarch
- 1 tsp. cinnamon
- 1 c. light cream
- 11 oz. sweet pickles (ground)
- 2 c. sugar
- 1/8 c. soft butter
- 1 tsp. nutmeg
- 1 tsp. lemon extract

4. This Recipe Perfect for Pregnancy Cravings
Though not the typical pickle pie recipe, this was inspired by pregnant women craving ridiculous combinations, in this case, pickles and pie. This includes Red Kool-Aid pickles instead of the typical dill pickle to make this a sweet treat you won't forget. Two thumbs up for creativity! Maybe enjoy with a side of ice cream?

5. This Pickle Pizza Pie
You put jalapenos on a pizza so why not pickles? This pie looks so delicious and incredibly easy to make with its limited ingredient list.
Ingredients:
- 1 Prepared pizza crust
- 2 tablespoons olive oil
- 8 ounces cheese of choice
- 7-8 dill pickle slices cut in pieces
- A handful of freshly chopped dill
