Venison Breakfast Sausage Patties

Sausage is an important part of breakfast. I know, bacon gets all the love, but sausage is really where it's at. And it's surprisingly easy to make sausage patties at home. If you're looking for a way to cook up some venison from the freezer or find a different way to store a bunch of fresh venison, you really have to try these venison breakfast sausage patties. Venison sausage is both good and good for you. This wild game has less fat than beef and is high in protein and other nutrients. This kind of sausage making is easy, since you're only making sausage patties, not links that need to be stuffed in a sausage casing. You can use pre-ground venison from the grocery store, or if you have a meat grinder and fresh deer meat, you can grind your own.

You'll need a pound of ground venison and 8 ounces of ground pork, plus brown sugar, thyme, dried ground sage, plus kosher salt and ground black pepper. In a large bowl mix together the ground venison and ground pork, then work in the brown sugar, thyme, sage, salt and pepper. The best way to mix the ground meat together is with your hands. Sure, it's a little messy, but it works better than with a spoon.

Shape the meat mixture into 10 patties; the easiest way is to roll them into little meatballs then flatten them out some. In a medium skillet heat a teaspoon of canola oil or olive oil over medium-high heat. Add the sausage patties to the hot oil and cook them until they are browned and cooked through. Ingredients
  

  • 1 lb. ground venison
  • 8 oz ground pork
  • 1 Tbsp brown sugar
  • 1 tsp Thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oil

Instructions
 

  • In a large bowl mix together ground venison, ground pork, brown sugar, thyme, sage, salt and pepper. Shape into 10 patties.
  • In a medium skillet heat 1 tsp oil over medium-high heat. Add sausage patties and cook until browned, and cooked through. Serve.

Notes

You can also make these ahead of time. Shape the patties and freeze them until needed.
We added the pork to add a bit of fat to the sausage so when buying ground pork, tend to buy fattier grounds.
