Your life is about it change. No, seriously. The Backyard BBQ Show has come up with another mouth-watering bbq recipe that is genius. It's essentially a twice-baked potato but with a bbq twist. It's a BBQ volcano potato.
After baking the potato, make an incision in the top and remove some of the guts so that you can stuff in smoked turkey and cheese (or really, whatever your little heart desires--check out this jalapeño popper version). Wrap the outside of the potato in bacon.
A charcoal grill is ideal for roasting these suckers, as you can toss on a piece of applewood to smoke the potatoes. But if you don't have a charcoal grill, don't worry, they will cook just as fine in an oven (but don't tell the guys at The Backyard BBQ Show).
Cook your volcano potato over indirect heat at 325 degrees for about 45 minutes. You may wish to slap some grilling sauce over the bacon to add a sweet glaze about five minutes before they are done. Pull them off the grill, top the with the volcano sauce (sour cream and hot sauce), garnish them with chives and voila!
